Morning Nostriches!

Morning garden report is that I have problems I’ve never dealt with before!

I have a 42 quart stock pot full of spinach & no idea what to do with it. Hubs had broke out the dehydrator & his plan is to make powdered spinach, but I think you need to freeze dry for that. I need suggestions. I’ve never been successful before, now what?

You don't need to freeze it to turn it into powder dehydrating will work, it just tends to take longer and doesn't preserve freshness as much. You can cook it and can it. You can blanch it then freeze it. Or you could just eat nothing but salads for a week. 🤣

Can cook and freeze, can also dehydrate and crush into powder. I do both with my swiss chard and sometimes add some lamb's quarters leaves.

Blanch and freeze. Easy. We use large ice cube trays with like the 1-2” square cubes. Once it’s frozen put in ziplock and it’s easy take out a portion at a time.
