Smoke then sous vide at 145F. Way better than pure smoking and wrapping till 190-205.
Gonna call this resurrection brisket or something and roll a stone over the top

I do it the opposite way, sous vide for up to 3 days at 145 and then smoke for a few hours. My kids pretty much eat it all before i get much of it. Have a good time with it!
