Direct sewing is your friend as things warm up. Most of what you listed with exception of the fennel which needs a longer seedling stage. Skip the repotting and transplanting whenever possible to save time and effort.

Yes to ginger and turmeric—but don’t expect it to over-winter. Pre-sprout, then plant in shallow trenches and hill periodically as shoots emerge. Harvest as “baby ginger” before first frost.

Direct sowing fennel in late summer for fall harvest has always worked best for me
