hmm https://keet.io is there already and while signal was down during the recent AWS outage, keet worked just fine.

now keet is open core, but the UI is not ...but signal serverside is closed source as well.

other chats on top of the same p2p stack exist, such as `quibble` or `cabal`, but because there is no funding they arent as polished.

honestly the monthly costs of just paying signal servers would easily polish all those p2p apps beyond what even keet does
