Depends what you need, with zeus ln you get a node on the phone, and you can use for a POS. For the bitcoin cafe probably an old laptop and using ubuntu you can install btcpay server, which comes with a node, and they have a fast sync setting that downloads 90% of the chain and all you need is a day...

Depends if you go for a outofbox like umbrel its easy couple of minutes but the sync of the blockchain takes couple days. If you do it on you own hardware the sync can take even couple weeks depends on the hardware used.
