Avocado oil can work but just be aware that unrefined avo oil has a lower smoke point. And yea it's fair to be scared it's terrifying I scream at least once each time I do it, sometimes before you get experience with how hot oil behaves you'll get to that smoke point and it's freaky! Wear long slee...

Animal fats work best, schmaltz, Lard, tallow, ghee or bacon grease.
