If you're fasting for blood sugar/improving insulin sensitivity, I say yes. Because canned heavy coconut milk is almost pure fat & should not move your blood glucose, but coffee can.

In a pure sense it depends on the exact type of fast you are doing. If by deinition your fast excludes coconut milk, then you would be breaking the fast.
