My family owned a farm and grew coffee. I was never there to see the whole process, but this guide is very similar to what I was told was done. https://volcanacoffee.com/coffee/peru/natural

I'm jealous of the elevation on your family farm. I'm only 400m. Quite low and my harvest period is right before or our sweetest months so Mold is a huge risk for me.

We will do a natural process this year and build our solar dryer and infrastructure for a washed process next year.

I love coffee but this is just personal as an experiment. If it works, we will plant more and go for a small batch of retail ready beans next year.

Sounds good! It's worth experimenting. The consumption of specialty coffees has grown a lot in recent years, so you could have almost boutique-quality production.
