Ghee is one of the oldest food preservation techniques.

It preserves butter by getting rid of water, proteins and residual sugars. Without those, bacteria and fungi find it difficult to get a foothold.

It’s butter you can keep on a shelf for months to years unopened.

From the ayurvedic side i heard about medicinal ghee. Ghee that is buried for sometimes a decade in the earth. The longer in the ground the more medicinal value it has. Havn't tried i though.
