Bro, it started raining while I was making it ๐.
I was trying a new recipe today.
Day 1: make huge biga. 1000g flour 00 (Caputo nuvola or chef) 450ml water. 1g yeast.
Shake it like crazy till it has some weird structure. Put in fridge 24h.
Next day take the biga, cut it on smaller pieces, add 230ml water and 0.3g yeast. Mix it, kned it (via machine or by hand). Fold and kned it until it's smooth by hand then. Wait 20 min. Cut to 6 pieces (265-285g)
Back to the fridge. Another 12-24h later take them out 2-4 hours before you bake them.
I like the recipe. I used other poolish and biga recipes before. Also good.
