What's the healthiest, most non-toxic cookware? I've been reading up on it a bit, but there is so much information from so many different places.

For frying pans, it seems like cast iron or carbon steel. (both requiring seasoning)

For bakeware, it seems like borosilicate glass.

For stovetop pots, it seems like enameled cast iron? I'm really having trouble with this category.

I know there are stainless steel options with encased aluminum cores, but something about cooking all of your food on a surface with a neurotoxin millimeters below doesn't quite feel right.

Aluminium is fine until an acid food touches it. Like asbestos, it's bad only one way but totally acceptable all the other ways. Go with sealed aluminium. Will do nothing and last longer. Just, no dish washers!
