Forgive the ignorant question, but what’s the best way to follow news here? Do I create lists? Which functions are the best to use?

We don't any news sources here, but we do have "accounts" that are essentially RSS feeds of news organizations. You can follow the existing npubs that are setup, or burn your own RSS feed. rsslay.nostr.moe

You should look into running your own relay and post everything you write to there and multiple other relays like damus. This way you will always have a backup of your own data and can move it somewhere else quickly in case you'll ever need that. Just tell ppl your relay address and they can pull in...
