I'm more of a "Language of the Birds" kind of guy than I am a language of the dolphins or whales kind of guy, but, fortunately for this subject, dolphins do actually make an appearance in the Language of the Birds in a significant way.
Dolphin is extremely phonetically consonant and assonant with Delphi, the site of the Temple of Apollo and the Oracle, Pythia, named, not coincidentally, something very close to python, a serpent.
The Delphic maxim "Know thyself" is indicative both of meditative reflection and gnosis/da'ath./vishuddha. Apollo was a god of enlightenment more so than light, despite having piloted the sun titan, Helios's chariot.
In Greek, Chi, Rho, and Phi are an expression of the perennial Holy Trinity corresponding respectively with the Divine Masculine, the Divine Feminine, and the Divine Offspring of their unio mystica, their hieros gamos, their alchymical wedding, their yoga...an enlightened being...a Divine Child a.k.a. a Child of God.
Chi corresponds with the Divine Masculine, the Crown Chakra, horns, horned beasts of burden like bulls, oxen, goats, & rams, penetrative tools like swords or spears, Alpha/Aleph/Alif/Ka, Fu Xi, Damballa, Hermes, God the Father, Osiris, and penetrative divine traits like Wisdom which penetrates foolishness, Severity which penetrates resistance, and Victory which penetrates thresholds..
Rho corresponds with the Divine Feminine coiled around the Root Chakra, serpents, receptive vessels like pots, vases, earns, chalices, bowls, etc., concepts like refuge or shelter, Omega/Teth/Ba/Ba, Nu Gua, Ayida Weddo, Aphrodite, the Holy Spirit(which is feminine according to the non-canonical Gospel of Philip), Isis, and receptive divine traits like Understanding which is predicated upon reception of information, Mercy which is acceptance of that which has already transpired, and Glory which is taken in.

Found in words like photon, St. Justin Martyr's photismos & photisma, Phoebus (Apollo), epiphany, neophyte, hierophant(has Chi, Rho, & Phi), Pharaoh, prophet, philosopher(twice), phenom, sapphire, sphere, Sephiroth/Sephirah, Memphis, Apophis, ophis, sophi, Orphic/Orpheus, and, other words, plus the aforementioned Delphi and dolphin.
Additionally, we have in French, the prince who stands to wear the crown is the "dauphin". Dauphin is also highly phonetically consonant and assonant with dolphin if spoken with a French accent. The son who stands to inherit the crown is pointing twice as a concept to the Divine Child, the enlightened being whose aura has the halo, the crown of enlightenment.
Dolphins are one of several creatures that are tied to Apollo and Apollo is a god of enlightenment. Enlightenment entails activation of dormant higher chakras. This can be accomplished in theta dominant neural oscillation states. An interesting observation made by Dr. Steve Jozsef of Living from the Heart, and David Cole of the Aquathought Foundation was that human brain waves shift from high-frequency beta to low-frequency alpha/theta waves after a dolphin encounter.
That's probably why they're off limits. Same reason LSD is illegal. Same reason DMT is illegal even though we produce it in our own brains.
