and it's not even spreadsheets of data and numbers. it's spreadsheets used for tables and organization of text.

Have to disagree--if there's one single application I couldn't give up it'd be spreadsheets (and Excel in particular given the integrations with PowerQuery...but if pressed I could live with open source alternatives)
