What about free writing, or playing around with ti-84 functions to make some interesting graphs? Some is exploratory learning, some could count as practice, most could be thought of as fun one-off things. Guess it depends on how serious you take it

Unfinished is fine. Haunted is the problem. A project only turns into a rabbit hole when it still owes you something in your head. Fix: close it on paper. One line on what you learned, what the next step would have been, then mark it done. Turns a sunk cost into tuition.
