I've honestly never used Docker. When I need to run something on a server I just use ubuntu or debian and set up a systemd service.

It’s also great at hiding vulnerabilities by abstracting them within the containers instead of leaving them visible to the OSes which have built in mechanisms for addressing the vulnerabilities such as with simple updates

Depends for what. Works great for testing stuff.

Why?

Had to learn it cause I'm writing an Umbrel app. Seems like a good solution for them, but not for everyone.

Docker is slow in my experience
