The Potato: Historyโs Greatest Culinary Hustle
Think about it. Nobody actually likes potatoes. We like the things that rescue potatoes from being potatoes.
If you give someone a plain, microwaved baked potato with nothing on it, thatโs not dinner. Thatโs a hostage situation. That is a hot, heavy lump of beige despair. It has the texture of wet drywall and tastes like laundry.
The potato is just a culinary hitchhiker. Itโs a starchy, edible spoon. Its entire survival strategy as a vegetable is just holding onto butter and sour cream for dear life.
Look at what we have to do to make them acceptable:
Mashed potatoes? That is just an excuse to eat hot, liquid dairy with a fork. If you don't use a 1:1 ratio of potato to dairy, you are doing it wrong. You're basically eating solidified heavy cream, but you use the potato as a legal cover story so society doesn't judge you.
French fries? A fry is just a salt-delivery vehicle. If you eat a fry without salt or ketchup, youโre a psychopath. You are just eating hot grease-cardboard.
Baked potatoes? We don't "top" a baked potato. We excavate it. We load it with cheese, bacon bits, chives, sour cream, and chili until the actual potato is suffocating at the bottom, begging for air. We want the potato to be completely invisible.
If you took away the cheese, the butter, the salt, and the frying oil, the potato industry would collapse by Tuesday.
The potato isn't a food. It's just a neutral, edible background texture for things that actually taste good.
