so the thing that would make it hold it's shape? try adding a bit of starch or fiber in there to make up for it

also that 3:1 dry to wet ratio is horrendous, that's why it's so horribly undermixed, go for at least half and half, and it might be a bit too much salt for the yeast

and get yourself some instant yeast, saf instant in the fridge will last forever and is fool proof
