How do I use @kidwarp's vanilla bean paste? Today I used it in cream cheese clouds.


1 lb butter, softened
1 lb cream cheese, softened
1/2 cup powdered swerve
4 tsp vanilla bean paste or extract

Wisk them together with the stand mixer, starting slow and working up to max speed for 1 minute. Plop onto a cookie sheet in 1 Tbsp chunks, and freeze for an hour. They're done. Box 'em and put them in the fridge or freezer.

The secret to getting them to be nice and fluffy is to leave the butter and cream cheese out for 2+ hours to soften. Trying to beat it together when it's too stiff will result in denser clouds, which is okay, but inferior IMO.
