I moved from LineageOS to GrapheneOS, one opensource Android to another, so it was pretty painless. Just had to remember to unlock then re-lock the bootloader.
Moving from stock Android to any opensource OS means finding open source replacements for common apps. That's the hardest bit, that and becoming responsible for backing up your own data.
