This is the same config that we are sold by any cloud saas. I truly agree true sovereignty is the best. But it is also too technical/sophisticated for most folk.

Sophistication is inversely proportional to sovereignty. Until it become the ordinary. All technical development have starting from fire have this problem. Same is with any tech; bitcoin included. We need better know how about how things run before we push more sovereignty.
