I ended up having a late lunch because I cooked my marinated chicken over very low heat. I only used a small amount of oil, just enough to keep it from sticking to the pan. It took more than half an hour to cook, but that's how I always fry my chicken: low heat and less oil. It takes longer, but I like the result.
I'm having brown rice again today, the one my sister kindly gave me recently.
