The Arenal volcano area has some great hikes and thermal springs. I'm not a surfer but I have heard that the Uvita and Dominical beaches have the best waves for all levels. I have a place for rent in Tamarindo which is more touristy but has great dining, lodging options and an all around beach that can't be beat. Let me know if you need more info.
