It's really easy, honestly. Let's say you have two dice. You roll them and write down the numbers on a piece of paper. Do that 50 times for a total of 100 rolls. Enter the numbers into the Coldcard and this ensures you are not relying on the device to generate your seed. It really isn't complicated at all.
