I knew v1 architecture is deprecated, but still hard to pick v2/v3

GM! cashubtc/npubcash-server:v3 is the right branch to contribute to. Sorry for the mess, it had been a rough few days haha. I am cleaning up the repo as we speak and will set that branch as default.
