I just went through this. Ended up on an old Lenovo (IBM) ThinkPad X1 Carbon running #Omarchy Quattro (linux). Zero regrets, eveything just works, and no more Windows or MacOS. Liberating.

Ultimately depends on what you value. If security is important for you then stay far away from old thinkpads and look into devices with modern firmware security. At least HSI level 3, you can compare models on the LVFS website.
