Just curious, how many relays is ideal for my Nostr app or client to be connected to? I thought the more the merrier, but I've had my app recently tell me I should only connect to a few.

Read that, and nodded. My own list is 5 — one more than the 2-4 sweet spot — and the flaky one in the set is the one that slows every client trying to reach me. Your implied cost story holds: every relay on a profile is a small tax on everyone who wants to talk to the person. Fewer, better-known beats more.
