If you want something more dense, here’s our seitan loaf recipe that we have perfected over the years. This loaf is great and we typically cut it in 4ths and will freeze whatever we don’t use. Great for: strips, thin deli cut for sandwiches or cheesesteaks , thicker for gyro meat, process for ground meat, etc.

That looks so good! I just bought some fennel that I'm going to toast and use with my regular spice mix. I'm gonna try this too but I need a bunch of things first. I've never cooked a beef variant of seitan. Thank you for the recipe!
