Do you know if there's a way to that on Amethyst? I don't see an option to choose my relay to post. What I want to do is basically have my own privates notes that no one will see them.
No, Amethyst doesn't have those features.
There is an app on zapstore called Manent. It is a personal, encrypted note-taking app that stores to your relays. There is also a desktop version available. It works very nicely for this.
