In my case Google play services in general since some apps require it to run. I solved the issue moving to graphene os and creating a profile with google services for this kind of apps. Forbthe test, you are covered using stores like Aurora and complementing with fdroid, Obtainium, etc.

YouTube would be hard to quit.

I think gmail is the last to cut, when one does want to not loose access to some accounts activated with the mail. For me this is the last cervice I still have. Hopefully in the next days, I can quit the last services which use my gmail.

I don't use any google services. I'm completely degoogled. Follow this way, be degoogled: Use GrapheneOS or CalyxOS with MicroG instead of Android with GSF. YouTube is my last one. And Waze since the fuckers bought it. Still haven't found a good enough replacement.
