LineageOS tends to be good. Nowadays you can even use Claude or similar to install/adapt into any unlisted phone.

There isn't a single "private" smartphone nowadays. All of them phone home and give away your identification (on the chip level), in the end you are only stuck with building your own network and hardware when you aim for privacy.
