@nprofile1q... traditional Neapolitan pizza has a raised crust all around the edge for ease of handling, since it was born as street food for the lower classes. (Huh. Now that I think about it, it sure sounds like the Cornish pasty.) Obviously it's just cooking and you can make it however you like, but personally I enjoy both styles. As long as I can chew it without chipping a tooth 🤨
