Happy Maslenitsa!

Today marks the start of Maslenitsa Week, also called Pancake Week, Butter Week, or Crepe Week; a seven-day Eastern Slavic festival celebrating the end of winter and the arrival of spring. Taking place the week before Great Lent, it’s a time for joy, feasting, and tradition.

The centerpiece of the celebration is the blini, golden pancakes that symbolize the sun. Made with flour, eggs, milk, yeast, and a pinch of salt, blini are wonderfully versatile, served sweet with jams or condensed milk, or savory - the most famous version topped with fish roe or caviar.
