How does it work? I thought the identity _is_ the pubkey, which is determined by the signing key, and so irrevocable.

The way it works is that you get two keys, not just one. The first is a "master" key that stays offline in cold storage and never does any day-to-day signing. As for your difficulties connecting, was that when you were trying to log in? Inkan uses NIP-7 logins, and for that you'll need to have a browser extension installed, for example nos2x.
