E-ink displays only crossed got to the 60Hz mark last year, and then only a few such displays have hit the market. The ones that have are VERY expensive, far more expensive than comparable size LCD/LED. I haven't found latency numbers on those, but most E-Ink wave modes are high latency, with the fastest (most ghosting) still being 120 ms.
Eventually, they may be ready. Not yet though.
