I would recommend GrapheneOS. Apple/iPhone may be considered the biggest hurdle to separate from, but GrapheneOS is a viable alternative almost every app works, maybe with a few exeptions, where the app provider don't allow 'rooted' devices. I only have one device that don't work, "digital ID" from the government, so they had to provide me with a piece of cheap hardware instead 😉 (no GPS etc.).
