I'd been pondering this as well when the time comes for us to switch to a modern vehicle (likely an EV then). How can we disable the telemetry and surveillance tech?
Are there people documenting this stuff out in the world? Wrapping the aerial in tin foil? Ripping out the SIM card (likely an e-SIM, though)? Clipping the red wire?
I'd like to see some community to arise around this, just like there's stuff around jail breaking Android phones ...
