Can anyone recommend some actually private VPN options that I could use later this year whilst in #China? I need something that isn't a honeypot but will also get me through the Great Chinese Firewall.

Mullvad When I was there, I used NordVPN and ProtonVPN, both worked. I believe most of them will work, the government don't give a crap as long as you're not talking about politics when you're there.
