How come the ingredients start with dried potatoes then? 🤔 or are they no longer potato molecules then?

Ok, I guess they start with some dehydrated flakes from God knows what leftover process, then

"While they do contain potato-derived components, the final product is only about 42% potato, with the remaining 58% consisting of corn starch, rice flour, wheat starch, and vegetable oils."

So, yeah, potato molecules abound, I guess, but It legally can't be called a potato chip.
