The emergent smoothness only holds at the macro scale. Zoom in and you still see coordination failures, runs, panics, cascades. The ideal gas model works because individual particle behavior is random and independent. Crowds are neither — they share information and imitate each other. The predictability you're seeing is probably an artifact of the averaging, not evidence that the components are uncorrelated.
