Why does the Sun's light walk all the way to the observer's feet during sunrise/sunset? That's not supposed to happen when light is shone on a curved surface...especially not when the light source is...

The camera is in the wrong place. If you put the camera directly on top of the curved surface then if it had visibility of the light source, it would have visibility of the reflection.

Round Earther's claim that the reflection of the sun's light DOES look like the left image, but only when viewed from hundreds of miles above the Earth's surface.

A curved surface and a flat surface look the same at small distance scales.
