One potential issue with MNS though: if I have to pay for my name with bitcoin, wouldn’t it be trivial for every name to be doxxed? If you’re just paying the fee with onchain bitcoin?

Not necessarily, because;
1. Initially you are most probably going to get your name from someone else who did register a batch earlier, so that Registrar is assigning you a name as a "trust me pro" situation, where you sign-up with a Passkey or email or whatever, and the registrar promises to eventually transfer ownership to you when you are invested enough to try self custody.
2. When they transfer it to your address, they may pay the fees themselves, potentially just as a part of the service, that you paid for other ways, or as a batch transaction for fee saving.
3. The address that you transfer the ownership to could be any Rootstock address, and most of the time it is only meant for rotation and recovery etc., you don't have to put RBTC in it, and even if you do, you can use a swap app to transfer BTC to RBTC and that swap app isn't likely to dox that relationship, but if you are really paranoid wait until there is good privacy solutions on Rootstock

So long story short, yes if you aren't careful to take some steps to break the trace from your main wallets to the address you use for making key rotation events you might get in trouble.

My ideal scenario is that all these transactions are performed by your Registrar/Nameserver/Hosting provider and you just pay them for your subscription and that is just among the costs.

The latter seems realistic and aligns with the number one business model I can see around all this: hosting + convenient security
