Yeah, in fact its better for soup dishes than bok choy imo. Napa is what is used for kimchi. Also, when cut up and boiled in a soup, it adds a surprising amount of sweetness to the soup.
True story, I just bought some fresh kimchi from my local Asian market - love kimchi as a side and on any rice bowl. I don't feel half as stupid about the napa cabbage now - gonna call it a happy accident!
