Actually, lobster is an ocean bug and if cross-country train rides didn't require feeding passengers you probably would never consider it as food - or at least, you wouldn't be paying a premium and excited to do so when you ate it.

Lobster as a delicacy is purely an invention of American capital; the train lines could save money by serving you lobster so they promoted that like a feature, "not a bug." Even though it literally is an ocean bug.
