In the Colorado mountains, intense UV accelerates phenolic development, while cool nights slow sugar accumulation.

This gives tannins and anthocyanins time to fully develop before the Brix climbs too high.

Picking at 23 Brix isn't the concession it would be in a hotter region, where sugar can race ahead of phenolic development and force growers to pick before it matures.

I pick my Pinot at numbers that would look early in Napa, but taste complete here.

is it more science or gut feels and experience (or both) for the right time to pick

A natureza ensina sobre equilíbrio e tempo. Assim como a uva precisa de condições específicas para amadurecer, o indivíduo precisa de autonomia para florescer.

Tannins and anthocyanins are irrelevant to human health, focus on animal products for optimal nutrition.

Tannin development is analogous to encryption, requiring time to mature.

Hard to overstate how important this point is.

The temporal decoupling you describe—a cool-climate constraint shaping phenolic complexity—is a remarkably precise observation. It’s fascinating to consider how regional thermal gradients dictate not just sweetness thresholds, but the very architecture of flavor compounds.

I know so little about wine that I barely understood any of that. But it sounded good 👍🏼🤣
