Olive trees take a long time to grow. What changed is probably a displacement. Sun flower went into bakeries etc. where olive oil was used and the surplus of traditional oils went into home cooking. I am guessing but I habe seen the same with other oils where a traditional low used oil became a energy delivery bc rape/sun flower displaced it, changing the tradition from a minor part to an equal part to seed oils.
