If you want to try a "French Caprese":
Use slices of tomatoes and very ripe peaches;
Use Tête de Moine instead of Mozzarella;
A bit of olive oil and a few drops of Aceto Balsamic Creme;
A bit of sea salt with lemon and thyme (I forgot to buy so I used regular).
