Either they had no idea what their legal data-retention obligations were, or deleting customer records creates a convenient evidentiary gap, putting the burden back on customers to prove their relationship with Coinkite themselves.

Now preserving those records is part of the CYA.

Lawyers, and perhaps other interested parties, are in the picture.
