I am fairly certain that it is pronounced "s", not "sh". It's just a double 's', such as in 'heiss' or 'Essen'.

as well as ß being the same as the expanded "ss" there is no C in german, only K and S. there is also no "oi" dipthong in german, nearest is 'eu' as in 'feuer'. spelt in strict german rules it would be schittkeun
