Well. They are still required to log the amount you bought at some point in time.
But what you do after on-ramp is pretty much obscured, so it's probably good enough for 80% of all users
That is correct but all of our data (Bull Bitcoin) is logged on our own run servers, keeping the highest level of privacy for our users is our core priority. I work at Bull Bitcoin that'd why I can vouch on the operational practices.
